Mishti Doi or Bengali Jaggery Sweetened Yogurt is my childhood favorite. I am sharing the Mishti Doi recipe in this post. It is a fermented sweet yogurt and a Bengali delicacy. I don’t have any Bengali roots but still, I enjoy having chilled Misthi Doi from an earthen pot. I believe earthen pot enhances the taste of the dahi and it also absorbs excess moisture. This jaggery sweetened yogurt serves the purpose of dessert for me. This doi has a strong smoky aroma and taste of jaggery when combined with yogurt tastes so good. This is not the authentic Mishti Doi recipe. Because Mishti Doi is usually made with sugar or caramelized sugar or Nolen gur (date jaggery) but here I have used only jaggery.
Laal Mishti Doi Recipe
This is the traditional way of making Mishti Doi which is time taking. You will need almost 6-8 hours depending on the local weather for the yogurt to set. The milk is boiled over a low flame so that it reduces from its original volume, then sugar or jaggery or date jaggery is added to it. Allow the milk to cool for some time just when it is slightly warm then add an active culture of yogurt and mix well. Pour the entire mixture into the earthen pots and leave it for 6hrs to 12 hrs or overnight in warm and dry place to set firm and thick. And enjoy it as a dessert or with your meal. Little caramelized sugar is also added to give reddish brown color if using regular sugar. But in this case, jaggery gives an amazing reddish brown colour to it.

The coconut filling I used in these samosas is inspired by Udiche Modak. Yes, right those steamed Modaks made during Ganpati festival because I simply love it. The sweetness given by jaggery with a dash of freshly grounded cardamom powder to the shredded coconut tastes so good. I used the Sprig’s Whole Green Cardamom and it’s the best. I was having some spring roll sheets with me so I used it to make the samosas but you can use the regular samosa dough too, just ensure you roll it thinner than regular samosas.

I am a true lover of salted caramel flavor be it popcorns, frozen yogurt, shakes. I am the happiest person after receiving a jar of Salted Caramel Sauce from SPRIG gourmet. I am sharing the recipe of Phirni with vanilla flavor. Phirni is a rich, creamy dessert with dry fruits. Phirni tastes best when served chilled in a clay pot or container. The festival season has already begun and I am sure the preparation, shopping, cooking has already started. The best things about these festivals are lots of good food, family time together and a break from our busy schedule. In our culture, festivals are majorly associated with food, sweets, savory snacks especially for Diwali. I am always more excited for the Diwali festival because of the beautiful lights, decorative Rangolis, few crackers (of course), and sweets.
Traditional Indian sweets are hands down the best, but here I tried to give some twist to the Phirni recipe. In order, that there can be something new on the Diwali special menu. So, this time I gave a slight twist to this rice-based creamy pudding Phirni by giving it a mild flavor of vanilla and cranberries. For the vanilla flavor, I used Demerara Sugar infused with Real Madagascar Vanilla. It is a different kind of sugar with natural, caramel-like flavor of the rich golden Demerara sugar crystals. Not only does it gives an amazing flavor, but nice color and also a pleasant vanilla aroma to the dish. SPRIG’s vanilla sugar is best for sprinkling on cookies or also for giving vanilla flavor to cakes, beverages or baked items.
I also used a pinch of freshly ground cardamom powder made from SPRIG’s green cardamom from Kerala. This is one of the best aromatic cardamoms that I have used. The aroma of cardamom remains in your hand, even by just holding it in your hand for a minute. I have used dried cranberries, it is optional you can add any berries or dry fruits of your choice.

No Butter, No Oil – Eggless Chocolate Oats Banana Cake
I have said a big “no” to the all purpose flour cake. When you are baking a cake for yourself why not bake the healthier version of it.I am talking here about a healthy cake, which has oats, banana, flaxseeds and yogurt. No Butter, No Oil – Eggless Chocolate Oats Banana Cake. Sounds healthy and tastes good too. You know what stops me from baking a cake frequently at home is Butter and yes, oil too. It has happened almost every time that when I came across any interesting cake recipe I very enthusiastically read it. The moment I go read the ingredient section and after reading the insane amount of Butter or Oil and Cream is added to it, my interest is gone. I know it sounds weird and trust me, I have got such reactions like “Come on it a “Cake”, it can’t be butter or oil free.
Gulit free and Healthy Cake
And I say “why not” ! I am not a very healthy eater but I think if you are eating out you really don’t have control over it. But if you are at home then you can have the full control over the ingredients. It’s a good idea to find a recipe of a cake, which you can be eaten guilt free and baked more frequently. Ok, I agree that it might not be that moist or that goooooood like a normal cake is but I think that’s not bad at all. I am an ice-cream lover and I am sure most of us are too. The only reason I restrain myself from eating ice-cream is for the obvious health reasons. I have been reading a lot about frozen fruit natural ice-creams these days as a healthy substitute of dairy and sugar containing ice-creams but had never tried any of them. Yes, I have used frozen bananas for smoothies (I love banana strawberry smoothie:) ) and have two or three laying always in my freezer. Pureed frozen banana resembles exactly to soft serve ice-cream. You can either refrigerate it and make it solid and enjoy this guilt-free, gluten-free and vegan ice-cream later.
