How to make mango shrikhand

I am yet to find someone (mostly Indian) who says I don’t like mangoes. This summer’s special fruit is one of the few good things about  this unbearable summer. Summer calls for Mango based dishes. Homemade Mango Shrikhand Recipe

Shrikhand is one of my favorite and simplest yogurt based dessert. It is very popular in Maharashtra and Gujarat region. Shrikhand is served with pooris or in Indian thalis or can be consumed like a sweet dish. To make Shrikhand, the consistency of the yogurt plays the key role. You can either prepare Hung curd or thick curd at home. Hung curd is prepared by tying yogurt in a muslin cloth or cheese cloth till the water is strained which usually takes 5-6 hours or overnight. For Instant Shrikhand recipe use Greek Yogurt or store bought yogurt and strain it to remove excess water. The curd or yogurt shouldn’t be too sour. Basically the yogurt needs to be thick and not watery.

The yogurt is then mixed with sugar, saffron, cardamom and then chill it before serving. You can add any fruit of your choice and make different flavors of Shrikhand. Like wise you can prepare Mango Shrikhand or Aamrakhand, Strawberry Shrikhand or Pineapple Shrikhand. Add honey or sugar to sweeten it depending upon the sweetness of the mangoes or the fruit used.

Homemade Mango Shrikhand/Amrakhand Recipe

The flavor of mango, saffron (optional), cardamom and yogurt makes it a mouth watering dessert. Mango Shrikhand tastes best when chilled. Prepare this in advance allow it to chill for 1-2 hours. The traditional method is time consuming as it requires 5-6hr or overnight for the preparation of Hung Curd. If you have some guest coming or want to prepare it quickly, then use Greek yogurt or the store bought yogurt and strain it to remove any excess water. Before serving, you can garnish it with some chopped dry fruits of your choice or serve it without them.

Instructions

  1. Place curd over a muslin cloth and keep it over a strainer and allow the water to drain completely. Keep it in the refrigerator while it strains as this will prevent the curd from getting sour.
  2. Leave it for 4-5 hours.
  3. Meanwhile, make a puree of the fresh mangoes. Use fresh mangoes and not the canned ones for the better results.
  4. In a bowl, add the hung curd and mix it well using a whisk till smooth.
  5. Add the powdered sugar, mango puree, cardamom powder, and saffron and whisk till it is well blended.
  6. Allow it to chill for a couple of hours or a minimum of an hour.
  7. At the time of serving garnish it with chopped pistachios or dry fruits of your choice.

Recipe Notes

Use only thick curd and not watery curd.

Use fresh mango puree and not the canned.

Use of saffron is optional.
