  1. Boil eggs and de-shell it. keep aside
  2. Mash boiled potatoes and add coriander leaves, red chilli powder, green chilli, garam masala, cornflour and salt. Mix well
  3. Take a portion of mashed potato mixture, flatten it and place the egg in the center. Cover the entire egg with the potato mixture and no gaps should be left.
  4. Repeat the same step for other eggs.
  5. Keep it in refrigerator for 10 minutes.
  6. Meanwhile heat oil in a wok and gently drop the egg-potato balls in it and fry it on medium flame so that it gets the golden brown color uniformly.
  7. Remove it on paper napkin so that it absorbs the excess oil.
  8. Cut the chop in two halves.
  9. Add chopped onions, chaat masala and green coriander chutney on top of it and serve immediately.

Recipe Notes

If you are not adding cornflour in the potatoes mixture you can dip the balls in cornflour batter and coat it with bread crumbs. It will give more crispy texture to the egg chops.
