Aam Chunda
Aam chunda is a mixture of sweet, spicy, and sour mango preserves and is made with raw mangoes, spices, and sugar. This instant version is quick and requires no sunlight exposure.

Ingredients

Instructions
Wash and peel the raw mangoes. Grate them using a grater and set aside in a bowl.
In a pan, heat the oil over medium heat.
Add the grated raw mangoes to the pan and sauté for 2-3 minutes.
Add sugar, turmeric powder, red chili powder, roasted cumin powder, black salt, and salt to the pan. Mix well.
Cook the mixture on low heat for 5-7 minutes, stirring occasionally, until the sugar melts and the mixture thickens slightly.
Turn off the heat and let the Aam Chunda cool down to room temperature.
Once cooled, transfer the Aam Chunda to a clean, dry jar and store in the refrigerator for at least 2-3 days to allow the flavors to meld and mature.
Serve Aam Chunda as a side dish or condiment with meals. It can be stored in the refrigerator for up to a month.
