Spicy Egg Pepper Fry
Eggs are my savior when it comes to the “cooking for one” days. Here is another lazy day lunch or dinner side recipe which is Egg Pepper Masala Fry. This is a popular dish of the South, where they call it Muttai Milagu Varuval or Egg Pepper Roast and they serve it with dal or rasam as the side dish. I stir fry the eggs with onions, few spices and gave it a South Indian touch by adding mustard seeds and curry leaves and it turned out to be really good.

  1. Heat oil in a non-stick pan
  2. Add mustard seeds and curry leaves in the pan and allow it to crackle, after a minute add chopped onions
  3. Add dry masala- garam masala, powdered black pepper, red chilli powder,turmeric and saute until the onions turn soft
  4. Cut the boiled eggs in half and sprinkle salt and pepper powder all over the eggs and add it to the pan and cover the eggs with the masala
  5. Carefully flip the eggs so that the other side too gets cooked and ensure eggs are stir-fried and coated well with the masala on both the sides
  6. Switch off the flame and sprinkle chopped coriander for garnishing
  7. Serve it immediately as a side dish along with dal or curries

Tip:

– You can alter the quantity of red chilli powder or black pepper powder as per your liking.

– Freshly grounded pepper powder tastes better than the ones available in the market.
