Okay, so what’s life without some spice?? Hmm.. It’s a subjective question so let’s not discuss it here and for now let’s talk about how our Indian food be without spices. Our Indian spices are world-famous and which are the highlight and uniqueness of our Indian cuisine. These spices not only add flavor but have many health benefits as well (we will talk in detail about this some other time).

While growing up I have always seen my grandmother preparing fresh spice powders and mixes every time for cooking. Then things became a little easy and saw my mom doing the same thing, but thankfully only on some occasions or for some special cuisines and mostly using the ready made spices available in the market. Now coming to me, I love to cook such elaborate meals occasionally but not always for sure. I am happy to try any new recipes and equally happy to try anything that makes cooking simpler.

We love Indian curries at our place. Both my husband and I are from North Indian; therefore, the North Indian dishes dominate the kitchen. However, we both love the South Indian curries equally. Cooking South Indian cuisines doesn’t come very naturally to me so I have been very skeptical about making the South Indian cuisines at home be it veg or non-veg hence, I haven’t gone beyond idli, Appe, Dosa, Sambhar or Coconut Chutney. Although, I love Rasam, Chettinad Chicken, Chicken 65, Fish Fry and a lot more, but never gathered enough confidence to try making it at home.

So, I got an opportunity to try the masala from Thillai’s brand. Thillais brand is based out of Virudhunagar, Tamil Nadu. Thillais is in the spice trade business for over 100 years. Initially, I was a little unsure and excited at the same time to know how these easy range masala are going to be because they are making cooking Chicken Chettnad or Chicken 65 sound so simple.

I thought of trying out the Easy Karaikudi Milagu Rasam. Rasam is an integral part of any South Indian meal and it is our very own Indian Soup to begin the meal. Making rasam using the Thillai’s Rasam powder was super simple and I made it by following three simple steps. The Rasam has a very significant taste of tamarind, pepper with garlic pods chunks in it. It was spicy as it is meant to be and delicious too. Now, I have a quick fix for sudden soup demands.

Instructions
  1. Heat oil in the pan.
  2. Add mustard seeds, when they start crackling, add chopped onions.
  3. Saute them and add tomato puree.
  4. Add the chicken chettinad curry masala.
  5. Cook for 2-3 minutes, add chicken pieces and mix well
  6. Add water and cook till the chicken pieces are nicely cooked.
  7. Adjust salt to taste and water to get the desired consistency.
  8. Serve hot with steamed rice or roti.
