To beat the heat one of the best Indian summer beverage is tangy Kaccha Aam Panna which is a very refreshing drink popular in North Indian and known as Aam ka Abshola in Hyderabad. The Aam panna recipe is very simple and it is made using simple ingredients like raw mangoes, fresh mint leaves, sugar, salt and roasted cumin powder.

 

As soon as the mangoes hit the market the first thing to do is buy the Kacchi Kairi or Kaccha Aam and make Aam Panna from it. The temperature is unberable and literally difficult to survive without air conditioner. Light colors, light clothes and eating something that is light on stomach too really helps to deal with this heat. I can happily eat as much fruits as I want and have the cool beverages all the summer. Check out the other Mango recipe too Mango Yogurt Parfait and Mango Mastani.  I totally enjoy the Indian beverages like chaas, lassi, sattu sharbat, aam panna, etc. Fruits can help in remaining hydrated and also provide the required vitamins and minerals. Raw mangoes have great antioxidants properties and are good for digestion too.

Aam Panna Recipe

Aam panna in summers is must and drink that we have grown up drinking. I am sharing the recipe that I follow to make this cool raw mango drink but other variations can also be made to the recipe as per your taste. Using roasted mango instead of boiled or addition of mint leaves, etc. I haven’t tried the Roasted mango version as used in the popular Bengali Aam Pora Shorbot. I pressure cook the mangoes with the skin but one can peeling them before and then pressure cook it. The raw mango can also be microwaved instead on high for 10 minutes

How to Preserve Aam Panna

You can make a concentrated mixture of Aam Panna and use it as and when required. To make it, add less water while boiling the mangoes and do not add extra water to the panna. Add the spices and store it in the fridge in an airtight container and it will easily long for 1-11/2 months. Simply use 2-3 tsp of the concentrate,  add cold water and ice cubes to it, stir and it’s ready to drink.
