After a lot of hit and trial and unsuccessful attempts to make that perfect Chicken Tandoori and finally, I succeeded. How to make tandoori chicken in microwave convection oven at home:
Most of us order Tandoori Chicken from restaurants thinking it’s healthy because it is grilled. But actually, they add an insane amount of oil at the time of marination which makes it quite unhealthy. Therefore, it’s always good to prepare it at home and you can have the full control of what goes in it. I haven’t used any food color. The Kashmiri red chili powder gives a good color to this tandoori murg. You can serve Tandoori chicken with mint yogurt chutney or regular green coriander chutney along with some onion slices or a mix veg kachumber salad.
I have tried both the methods of double rounds of marination and single too and felt the results are almost the same. The time of marination is the key to make perfect chicken tandoori (More the merrier :P) 5-6 hours of minimum marination or overnight marination works best. So, plan and prepare this yum tandoori chicken at home. After cooking the chicken in the convection mode I grill them for 5-6 minutes to get the char. The convection mode cooking helps in retaining the juiceness of the chicken pieces which is missing if you only grill it. You can also cook it on Tawa, if you don’t have oven or microwave and it will taste good too.

- 1 kg Chicken cut into 8 pieces
- 1 cup hung curd or thick curd
- 1 tsp red chilly powder
- 1 tsp kashmiri red chilly powder
- 1/4 tsp Tata Sampann Turmeric powder
- 2 tsp freshly prepared ginger garlic paste
- 1/2 tsp coriander powder
- 1/2 tsp garam masala
- 1 tsp tandoori masala
- 2-3 tsp lemon juice
- 1/2 tsp kasoori meethi
- 2 tsp mustard oil
- 1 tsp desi ghee
- 2 tsp ghee or butter for brushing (optional)
- Salt to taste

- Take chicken in a bowl, make deep slits on them.
- In a bowl add yogurt and all the ingredients mentioned above.
- Add the chicken pieces in the mixture and mix welll so that mixture coats the chicken pieces well.
- Leave this to marinate for 6 hours or over night.
- Preheat the microwave oven.
- Place the chicken over a foil-lined the baking tray. Set the microwave to the convection setting. Set the temperature to 220 degrees or the highest temperature. Place the tray and bake for 5 minutes. After that remove it and flip over. Apply butter or ghee(optional) and any leftover marination.
- Now reduce the oven temp to 180 degrees C and bake it for 15 more mins. Take it out, flip over and apply butter/ ghee over it (optional) and bake it for 15 more mins.
- Check if the Chicken is cooked as per your desire. Else cook it for more time but keep checking in between.
- Now set the microwave on grill mode. Place the tray on the high rack and cook it for 5 mins till you get some char or black spots over the chicken.
- Remove it from the oven. Serve immediately.
- Sprinkle some chaat masala, chopped green coriander leaves and serve it with salad/onion rings and mint, green coriander chutney.
- Enjoy !
Use fresh Chicken as it will taste better.
Use freshly prepared ginger garlic paste instead of the readymade one.
Adjust the time of the oven as it might differ on temperature of your microwave oven.
